I have plenty - how about stuffed eggplant? I cut them in half and then scoop out the insides and hack them into small pieces. Put the small pieces of eggplant in a bowl and then I add, egg, seasoned breadcrumbs, salt, pepper, garlic, Parmesan cheese (about 2Tbs per eggplant half), diced mozzarella cheese, and mix it all together if it seems too dry add a bit of water. Then stuff the eggplant halves with the mixture and bake at 350 about 1 hour. I usually put a bit of water in the baking pan to keep the shells moist.
