Recipe: Roast Pumpkin Parcels with Roast Cherry Tomatoes

Mainly for my own memories, here's what I made for dinner last night.

Rice Paper Wrappers
Cherry Tomatoes
Spanish Onion
Balsamic Vinegar
Sea Salt
Olive Oil
Baby Spinach

Roast chunks of pumpkin (I used a small Butternut) in olive oil, with a couple of cloves of garlic. Mash pumpkin. Wrap globs of mashed pumpkin in Vietnamese Rice Paper Wrappers. Place in greased baking dish and brush with oil. Bake for around 25-30 minutes at 180C.

Drizzle oil in baking dish and scatter thin wedges/slices of Spanish onion. Sprinkle sea salt. Top with cherry tomatoes (whole or halved). Drizzle with olive oil and balsamic vinegar, and scatter a couple of minced cloves of garlic over. Bake for around 45 minutes at 180C.

Serve pumpkin rolls on baby spinach, topped with roast cherry tomatoes. Yum!
